You should follow the “1/4th rule.” This rule states that once 1/4th of your grease trap has been filled with F.O.G. it is time for your grease trap to be pumped and cleaned. Once your trap is 1/4th full of F.O.G., it stops being effective and can lead to foul odors, slow drainage and sewer backups.
